Vegan Chocolate Frosting

Everyone in this family has a food sensitivity, allergy or specific preference to take into account when planning a meal: no gluten, no soy, no dairy, some vegan, some vegetarian, and some who will *only* eat meat and proteins.

So, cooking for this crowd takes some research, planning and a little ingenuity. There are a lot of nut based frosting recipes out there, but this is my favorite.

  • 2 cups raw cashews (soaked overnight)
  • 1 cups pitted dates (soaked overnight)
  • 1 cup date soaking water
  • 3/4 cup almond flour
  • 1 tsp vanilla extract
  • 2 T maple syrup
  • 2 T coconut oil, melted
  • 3-4 T of cocoa powder

Soak the cashews and dates overnight in the refrigerator. Reserve date water.

Mix cashews and almond flour into a food processor until they make a thick paste.

Put in all other ingredients and blend until smooth.
