Apple Pie Frozen Yogurt

My stepdaughter, who likes about 0% of the things I cook, said that this is the best thing she’s ever had in her mouth. Uh…that’s a good thing, right?

  • 1 T butter
  • 1 apple, shredded
  • 2 T brown sugar
  • 2 T white sugar
  • 1/2 t cinnamon
  • 1/4 t allspice
  • 1/4 t ginger
  • 1/4 t cloves
  • 1/4 t mace
  • 2 cups Greek-style yogurt
  • 3/4 cup (150g) sugar
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 egg yolks
  • 2T lemon juice

I  melted the butter in a cast iron skillet, then put in all of the other ingredients and cooked until the apple was soft and the house smelled the way I imagine heaven might smell. Then I put the whole thing in the freezer for about 15 minutes while I made the ice cream base.

I put the eggs, egg whites, and sugar into the stand mixer and mix until they were slightly foamy, then added the yogurt, maple syrup, lemon juice and vanilla and blended until it was uniform.

I then poured the ice cream base into the ice cream maker and let it process for about 15 minutes. After about 15 minutes, I slowly drizzled the apple mixture in and let it incorporate into the mix.

When it looks done, stick it in the freezer, and wait. Or, eat it out of the ice cream maker container. Either way.

    I make apple crumble ice cream but haven’t tried yogurt..great idea x
